  • 1/2 cup grated Parmesan cheese
  • 1/4 cup pasta water (reserved)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. In the last 2 minutes of cooking, add the peas to the boiling water.
  • Reserve 1/4 cup of pasta water before draining. Drain the pasta and peas, then set aside.
  • In a large skillet, heat olive oil over medium heat. Add the garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  • Add the drained pasta and peas to the skillet, stirring to coat with the garlic-infused oil.
  • Stir in the Parmesan cheese and the reserved pasta water to create a light sauce. Season with salt and pepper to taste.
  • Serve immediately, garnished with fresh parsley if desired.

  • You can use whole wheat pasta for a healthier option.
  • Add cooked bacon or pancetta for a richer flavor.
  • For a creamy version, stir in a splash of heavy cream or ricotta cheese.
