8 ounces pasta (penne, fusilli, or spaghetti)
1 cup frozen or fresh peas
2 tablespoons olive oil
2 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional)
1/2 cup grated Parmesan cheese
1/4 cup pasta water (reserved)
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. In the last 2 minutes of cooking, add the peas to the boiling water.
Reserve 1/4 cup of pasta water before draining. Drain the pasta and peas, then set aside.
In a large skillet, heat olive oil over medium heat. Add the garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
Add the drained pasta and peas to the skillet, stirring to coat with the garlic-infused oil.
Stir in the Parmesan cheese and the reserved pasta water to create a light sauce. Season with salt and pepper to taste.
Serve immediately, garnished with fresh parsley if desired.
Notes
You can use whole wheat pasta for a healthier option.
